Strawberry Rhubarb Scrumptiousness

Welcome back to Making Memorable Meals,

This week I made a couple different meals but by far the best, and the one I’ll be talking about is the amazing Strawberry Rhubarb Pie I made with my mom on Sunday.

All pies are amazing but one of my favorites has always been Strawberry Rhubarb, the sweet strawberries combine perfectly with the tart flavour of the rhubarb to make a pie that is better than all pies. We used to make Strawberry Rhubarb Pies a lot when we had rhubarb growing in our yard but it’s been awhile since we had rhubarb. That’s why I was so excited when my mom told me we had everything we needed.

At home we make a lot of pies, but mostly around holidays or birthdays so it’s a real treat whenever we have them just for fun. Making pies can be easy if you over simplify by buying crusts or buying a mix but as with all recipes it tastes a million times better when making everything from scratch…

So here’s what you’ll need…

For the crust;

  • 2 1/2 Cups Flour
  • 2 Tablespoons Sugar
  • 1/2 Cup Butter
  • 1/4 Cup Shortening
  • 2-3 Tablespoons Ice Water

For the Filling;

  • Dozen Strawberries
  • 5 Stalks Rhubarb
  • 1 Cup Sugar
  • 1/2 Lemon
  • 1 Tablespoon Cornstarch

For the Glaze;

  • Heavy Whipping Cream
  • Cinnamon Sugar

To get started, Let’s jump into making the crust

  1. Mix Flour and Sugar in a Large Bowl
  2.  Cut Butter into Small Cubes
  3. Use Pastry Cutter to mix Flour and Butter
  4. Add Shortening and continue Cutting
  5.  Proceed until all Flour has been absorbed
  6. Slowly add Ice Water until Dough has thickened and has started to clump
  7. Make Dough into a Ball with hands
  8. Transfer onto Counter with Flour
  9. Knead into a large ball
  10. Cut in half let chill in fridge for 10 Mins

After the Crust has been made make the insides,

  1. Chop Strawberries into Fourths
  2. Chop Rhubarb up the stalk just past the red part
  3. Mix in a Bowl
  4. Add Sugar, and Squeeze Lemon
  5. Mix
  6. Add Remaining ingredients and mix

Finally All that is left is assembling everything that is already made!

  1. Roll out half of the dough
  2. Make sure it is larger enough by holding the dish to it
  3. Transfer into dish by draping over rolling pin and sliding it over, it’s ok if it comes apart that means it just needed more water…
  4. Patch any bits that came apart
  5.  Add filling
  6. Decide how you want to do the top, it can either be a lattice or a full sheet, we did a lattice
  7. Roll out top sheet, cut it into strips, in alternating horizontal or vertical interlace the pieces and pinch the sides
  8. Brush with Cream and Dust with Cinnamon sugar
  9. Bake in the oven with a pie rim on the top for 20 mins at 375 or until golden brown.
  10. Enjoy!!!

Making pies is a lot of work but it all pays off when the pie comes out of the oven and you get to devour it in a sitting. My dad always prefers his pie in the morning but I like mine right out of the oven.
